W H A T in the wild world of gardening is a CUKE???? Is it something that my yankee decoder ring can't lock onto?

I think it's a cucumber. Someone told me they make pickles out of them but I don't believe it.
Why am I in a gardening thread?

Greg..I've never tried to make mayo..what's your recipe?

I've gotten lazy in the last few years and use a blender.

Two brown egg yokes, the freshest eggs you can get.
One brown egg
a bottle of dijon mustard - grey popon should be used.
some lemon juice - usually two or three tablespoons worth, fresh if possible
some kosher salt or sea salt
2 cups of Olive oil, I try to use a good table oil and avoid Olive cooking oil.

I first put the egg yokes, the egg and a couple table spoons of dijon in the blender.

Hit the button for about five or seven seconds.

Then add the salt and lemon juice to the egg mix.

I blend on slow for a minute or minute and 10 seconds.

Then I slowly add the olive oil into the blender while it is on slow. SLOWLY and you will see it come together.

Once it comes together as an emulsion, I slowly add the rest of it but not as slow.

I stop it, dump it into a mixing bowl and whisk it for a minute or two. There may be some oil separated from the mayo, I pour that off or whisk it a little more.

Refrigerate the mix.

IF you taste it and it doesn't taste 'right', try adding a little more lemon or salt.

Depending on the quality of the Olive oil, you may only need one and a half cups of oil.

you can add a little pepper or paprika to the mix to make it different, I have ground up garlic and threw it in there to make a different mix.

ALSO if you want to be daring ...

Substitute the olive oil for Sunflower oil and it is a Russian mayo or try different mustards in the mix. I found that a French Dijon made with verjuice (original way of making it) seems to have a completely different flavor in the mayo and rather good tasting.

Use Duck eggs instead of chicken eggs.
