When you want a bowl of collard greens, simply take them out of the freezer and add some water and bacon fat and simmer slowly..so good! Then I made some garlic mashed potatoes out of the yukon gold and oh man were they scrumptious! I should have enough peas in the next few days to shell and freeze...already had some with some romaine and buttercrunch lettuce ..made an excellant salad. :)

I pulled more rhubarb today to try another recipe...since I'm not that fond of oatmeal for a crunch, I found one on Cooks.com that calls for a box of cake mix mixed with melted butter for the crumbles and it was pretty tasty..

It's called Strawberry Rhubarb Crisp if anyone wants the recipe.

6-8 cups diced rhubarb
1 small pkg strawberry jello
1/2 cup sugar
1 cup water
1 white cake mix (I used a spice cake mix)
1/2 c melted butter
Optional - 1 c chopped strawberries

Use a 9X13 inch pan. Place rhubarb in the bottom. Sprinkle Jello, sugar and water on top. In separate bowl mix the cake mix with the melted butter, then crumble on top of rhubarb mis. Bake @350 for 1 hour. If adding chopped strawberries, stir in with the rhubarb at the beginning.

There ya go Dakota...it's great warm with vanilla ice cream.:)

I'm thinking it'd be a good day to put up the rest of the collards..and yank the last of the first crop of rhubarb and chop it up and freeze it. One thing about rhubarb...there will be a second crop.:)

but but but..I was planning on training the grasshoppers to help me harvest the crops!:D

Just got another third of the collards picked and all of the rhubarb..now to process them..sure am happy I've got LOTS of counter space...:)

The last two Canteloupes I bought from the store were tasteless, I can't wait for the local stand to open so I can get some good ones.

I'm not seeing signs of my sugar watermelons though..or I picked them off as weeds..first try on them. :eek:

And I'm done for the day...5 bags of collards and 3 gallon bags of rhubarb..now all I've got to do is label them and take them down to the freezer! YIPPEE!!!!

Sure is nice to walk out to the garden, pick a handful of lettuce..wash it, spin it and chill it..Had a couple leaves on my tuna salad sandwich..refreshing!:)

woooooo woooo! I just picked about 2 pounds of peas AND I have banana peppers on the vine now!

hmmmmm..creamed peas...or pasta salad with peas, broccoli, tomatoes and onion? Guess I'd better get busy shelling some peas!:D

And it's raining here now...at least I won't have to water today. The humidity is so thick my banana plant is loving life on the deck!
