So I've got a campground full of harvesters...neat thing is that they hire a lot of kids from other countries who are saving up for their college education. The accents are wonderful to hear...the Irish, English and South African kids...and there's actually 2 Americans working on the crews too..one from Pennsylvania and one from Colorado. They'll be here for 2-4 weeks and their lovely wives will be the beneficiaries of some of my crops...ahhh..you gotta love the good old summertime!:)

I started picking jalapenos this week how long will they keep? Before going bad?

First and foremost...wear rubber gloves when you process them..I didn't and had tingly hands for the rest of the day.

I wash them, cut them in half lengthwise and take the seeds out. Drain them on a clean kitchen towel and when they're dry put them in freezer boxes or bags and freeze them. They'll be a little softer when you go to use them, but have the same flavor.

I recommend this cuz you're gonna have a lot of them..they just keep on coming..*lol* They should keep up to a week in the frig without processing them..just depends on how fast you're going to use them. :)

OH..and when you're tired of picking them...get a relative or neighbor that really likes them..invite them into your garden and hand them a plastic bag...:D
