Edamame
After we started driving it did not take either of us long to figure out that junk food was not something we wanted to snack on. We first used sweets to help keep us awake and alert and that created another problem, we started growing in size.
The search has been on since that time to find a nutritious snack that we could eat while behind the wheel. I enjoy pumpkin seeds, carrots, apples, occasionally asparagus, and dried peas. Bob enjoys Cliff Bars and mixed nuts.
I recently found Edamame, which is a soybean. I enjoy the bean in the pod form, as it is easy to push the bean into my mouth and than throw away the pod. I find Edamame in the frozen vegetable section of the super market usually on the to shelf.
I microwave the pods for two minutes and the pod is thawed to a perfect temperature. Edamame is a great source of protein and low in calories.
The calorie information came off of livestrong.com. Serving size is ½ cup of the edible bean and has 8g of fiber. I like that I have to pickup a lot of pods in order to get to ½ cup of edible beans.
