Health & More Update:
4 months since the official life style change. I don't like to call it a diet anymore, because to me, a diet sounds like a temporary thing. Which this is not. There is no end or completion, just a way of life now.
Besides losing 55 pounds so far, and despite still wearing the same (now very baggy) clothes, some health issues have been corrected.
My high blood pressure medicine was cut in half, and now I am medication free with perfect blood pressure
Also, the too close for comfort diabetes scare is a thing of the past

Since I'm home, I made Eggplant Pizza for the first time.
I must admit, this was way down on my list for creative pizza making ideas.
But I saw the eggplant while shopping, and thought it was (reluctantly) time to try it.
I've never had eggplant before, didn't know what to expect, let alone even know what the hell an eggplant was, I just figured it had to be yucky
As I was getting my toppings together, by mistake I bought diced black olives instead of sliced.
Diced apparently also means pureed, which is what it looked like to me, and it smelled awful. So I just mixed it in with the other ingredients I had simmering and hoped for the best.
To my great surprise, this was the best tasting pizza I've made yet. The Eggplant was really good.
As usual, first time looked like a hot mess, but boy was it good
