In addition to what others suggested, you might consider sitting at the Lebanon Pilot at Ex. 248 on I-40 for Friday. If no luck, move to multiple truck stops near I-40/I-75 split outside Knoxville on Friday night and sit there for Sat & Sunday. Worked for me, but that was a few years ago. Good luck.

The Ozarks are absolutely gorgeous.

Our small town had post cards printed up in the early 1900's with "Welcome to Morrison MO" "Gateway to the Ozarks"...

Nice! I think your best bet to get a load east is probably CA, but as long as you don't mind exploring the Great Northwest for a bit longer.
