I wonder if he has to do even more when the weather's good? That's a lot of inspections. Good job on the no violations, you guys are getting paid well for that. Color me envious...

Dakota, post it here, or if you really feel the need to appease, you can PM it to me , I might make them for Christmas myself...:D

Here ya go enjoy!!!

Cake Balls look like a truffle but are made with cake mix. This recipe was in our local paper last year.

Cake Balls

I Cake Mix (18 1/2 ounces), any flavor
12 ounce container cream cheese icing
6 ounces of flavored confectioner's coating (available in discs or as a bar, in white, dark, milk chocolate or what ever flavor or color desired

Prepare a 9 x 13 inch cake using the directions on the package. After cake cools, shred it in a big bowl with two forks, making it like fine bread crumbs. Add cream cheese frosting and mix until well blended. Even in a chocolate cake, the frosting disappears into the crumbs and makes them sticky.

Use your hands to roll the mixture into balls and chill them. (I put them in the freezer to chill). While cake balls are chilling, melt coating in a glass bowl in the microwave, or in a metal bowl over a pan of simmering water, stirring occassionally until smooth.

Dip the balls in melted coating using a toothpick or fork to hold them. Decorate the balls with sprinkles or extra melted coating, which has been put in a bottle with a tip. Place on waxed paper to set. Makes 36 servings.

Varieties are endless using different flavors of cake mix. Fudge cake mix coated in chocolate, and strawberry cake mix coated in white coating are yummy. Also you could do German Chocolate cake using that kind of cake mix and instead of using cream cheese frosting you could use a container of German chocolate frosting that has the coconut and nuts in it and then dip in chocolate.

Enjoy!

On Friday I was heading NB I69 in Indy at mm 50. 3 of us running together. Dot sitting in the middle, came up behind me, pulled me in the rest area around Gaston, IN for a level 1. During or conversation, he said "because of the bad weather, his quota for the day was 34 level 1 inspections." Since my last one was in Aug. it was my lucky day. No problem thou, passed with flying colors. As the weather starts to get bad, the man is gonna be working the nice days hard. Be ready! Thank you for the bonus John. Merry Christmas to all. Be safe.
