Best 48 cents I ever spent at Walmart.

The last few days I've been craving a thick ham sandwich. Not that thin sliced processed to death stuff. Truth be told I didn't really care about the sandwich part, I just wanted to sink my teeth into ham.

Well today at a New Hampshire Walmart I saw something I've never saw or noticed before. The deli was selling end pieces.

I never gave any thought to what they do with the ends when they get to small to slice. So after initially laughing at the sight, I noticed a nice 1/2 pound 2 inch thick ham end piece. It had already been reduced 50% to 48 cents so I grabbed it. Man was it good, would have made a great cheap sandwich if I had the fixings. But it satisfied the craving I've been having. Left behind my other craving of hard salami. Maybe latter if I'm still here

you got screwed...according in the deli in one of my favourite Walmart ....they aren't allowed to sell the end pieces of either the meats or the cheeses....
I often get "samples" of a couple different meats, enough to take out and make a sandwich.....learned this trick watch senior citizens a few times....the ultimate free lunch...:p LOL

Guess that explains why I haven't seen it before lol. Don't know about getting screwed, way larger then a sample size and I sure did enjoy it

Went into service this morning around 5am with my new company. Thought what the hell let's see if I can get something for a Monday morning delivery. Didn't get Monday morning but had a 220 miles run(all miles) that paid over a dollar. And then I got another call before I dropped for a run to Miami that delivers tomorrow morning and now I'm half way to Miami. Oh well, looks like I'll spend tomorrow on the beach instead of at home.

There are a million ways to do it right. And nearly all of them involve cornmeal. :D

Use fine, white cornmeal if you can find it. Sadly, fine white cornmeal is not always easy to find outside the South. In the absence of fine, white cornmeal, use the regular stuff with a little flour. Unless it is finely ground, a 100% all-cornmeal crust can taste gritty. Some like that (I do) but most don't. 3/4 cup of cornmeal and 1/2 cup of flour will do it.

I would recommend soaking the catfish in buttermilk (but regular milk will do) for 10 minutes before breading them. 1 cup will do 4-6 fillets.

Season the breading any way you like. Old Bay crab boil is popular. If you really want that lemon pepper thing going on, I'd put lemon pepper seasoning right on the fillets immediately before breading them to ensure a bold lemon pepper flavor. I prefer to squeeze the juice of a lemon right into the buttermilk and soak 'em in it.

Most of the time I don't use lemon, and just season the breading with a healthy dose of salt, pepper, garlic powder and paprika (equal parts), plus a half tablespoon of cayenne pepper. I also often add a dash (1/4 teaspoon or so) of celery seed.

You want to cook it in 1/2 inch of oil (peanut oil, or even better, lard) and make sure the oil is every bit of 350 degrees. Colder than that and the fish will be soggy.

Same getup works with any thin fillet, like bass, perch, crappie, walleye, etc.
Winner winner.. Catfish dinner! That was pretty darn good and we had fresh collards picked from my garden this morning and homemade potato salad. Thanks for the recipe! Loved it!

Lol, If they drop the price 50% on the hard salami, it will be hard for me to pass up

Well the salami was gone but more huge end pieces of ham came out. I couldn't even eat it all. Not bad for $2 but I don't think I'll have another ham craving for quite a while
