I'm guessing that bottle of rhubarb strawberry wine wouldn't have done it justice!

I have no idea. I guess it would be fine. I have only ever used white if I was cooking pheasant with wine.

I have a few things to do right now, BUT, when I get the time, I will dig up a recipe I have for white pheasant chili. It is a very famous recipe in this area and it's very good.

I will post it in here, in this thread, so others who may want it can see it as well.

Creamy White Pheasant Chili

Serves 4

1 pound boneless skinless pheasant breast cut into ½ inch cubes (you can also substitute chicken breasts or thighs)
1 medium onion, chopped
1½ teaspoons garlic powder
1 tablespoon vegetable oil
2 – 15 ½ oz cans great northern beans, rinsed and drained
1.5 – 14 ½ oz can chicken broth
2 – 4 oz cans chopped green chilies
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon dried oregano
½ teaspoon pepper
¼ teaspoon cayenne pepper
1 cup sour cream
½ cup whipping cream

In a large saucepan, sauté pheasant, onion and garlic powder in oil until pheasant is no longer pink.


Add chicken broth & additional spices.

Simmer covered for ½ hour.

Add beans, chilies and seasonings. Bring to a boil. Reduce heat; simmer uncovered for 30 minutes.

Remove from heat, stir in sour cream and whipping cream.

Had a pretty fair today out on the Lake. Winds were SSE that shifted to SE around 10-15MPH. Not the best direction by any means be light enough that is did not cause a real problem.

There are we few birds around, and despite it being on the slow side, we managed to take 23 today.

Can't Thank you and your friends enough Joe. Great day out, really enjoyed it. Total different type of duck hunting then I am use to. Great weather for a rookie like me to get in his first Layout hunt. Thanks again.

(Now I gotta figure out a way to tell the wife she needs a new style boat.)

You are more than welcome. I am happy you enjoyed the hunt, and I must say, you fit right in with the crew. Come out anytime. I totally understand why the wife needs a layout boat, it is a very addicting style of hunting.

We are going to be at the dock at 0700 tomorrow. Winds are predicted to be 20-25MPH, gusting to 35 out of the West. Much colder. We are expecting a push of birds forced in by the snow and extreme cold to the north and west of us.

The heavy west winds will "encourage" the birds to work into the shore line where we hunt. There will be almost "flat" water in the lee of the west shoreline of the "River". Making for perfect hunting conditions.

Just need the birds to show. IF that happens, it will be a day to remember.

She took the news about getting a new boat pretty good or fairly decent. She really liked the idea that I did not have to buy a motor with it.. Then I showed her all the new decoys and Riging I would need

LOL!! Yeah, I get it. Why don't you offer to buy her a new vacuum, snow thrower and blender to make up for it? THAT would fix it for sure.

Well I do have to get her a new/another 4x4 p-up to plow the road with.. One I got now will never roll snow again..its all done. :(

Get your deer hunting out of the way and I wanna sit down and talk to ya about making some decoys...You got me searching molds online and I have a pile of questions... Who is the best mold maker. Biggest question you made me think of was how will the homemade decoys ride in the water.. Anyways enjoy your trip & Put your dad right on top of some deer.
