For those who do home canning, there are many alternatives to "road grub".
Once, sometimes twice a year, I will make a LARGE pot of turkey chili. Pressure can it and use it to make "taco" salads. It is a better alternative to taco salad on the road, just prepare a salad, warm up some chili and pour over the top. I get to control the ingredients. Less sodium, less fat, no preservatives. Lots of lean protein.
Or you could just have a nice healthy bowl of chili.
Home canning preserves without the need of refrigeration and can coozies keeps the jars safe.
Home canning works well for soups,salsas and stews as well. Again, you know what you're eating.

If a driver puts his/her mind to it - there really are many more positive options available today.

Absolutely. Get creative and consider what you eat before and not just regret it after.

One thing I have never tried is canning. I agree 100% with you when I make something from scratch I know what is in it. I prefer to use as few processed foods as possible but at times I have to buy cans and I usually check the sodium first. I have noticed that I am seeing more and more options of low sodium foods.

There are a lot more low sodium options available now. If you do have to buy can vegetables, you can rinse them first, that will remove some of the excess sodium as well.

Oh, and if you do not grow a garden for fresh vegetables, you can always support your local farmer's market and home can with their fresh vegetables
