Jan and I cooked in our crockpot today, WOW!! Only being home could have improved tonights dinner. We had Joe's "Hot Pepper and Whiskey Beef Stew" (minus the whiskey ) Otherwise known as "34 hour reset Stew"!! THEN you can add the whiskey!! LOL!!!
You take 1 pot roast, 1-2 lbs
One can of low-salt beef broth
One packet of McCormick's Beef Stew Seasoning Mix
One onion (on the road we go to the "cooler" section of produce and get an onion already cut up)
Add a touch of garlic and some black pepper
Potatoes (We used a pack of frozen cut potatoes)
Get 4-5 Hot peppers, cut them in half and take out the seeds.
Cut the roast into bite size pieces. Put into the crock pot. We use liners to minimize clean-up. Add the broth and IF you are home or a 34 hour re-set, add a cup of Straight Bourbon to the pot!!!!
Put the peppers, garlic and black pepper into the crockpot, along with the meat and liquid, and "let 'er rip for several hours until the meat is done.
Later, remove the peppers and add the potatoes and the McCormick's. Cook till done. You can leave the peppers in and eat them if you perfer, but we like them for the flavor it gives the broth broth.
It is easy and quick to prepare and VERY good!! Enjoy!!
