Forks over Knives

Has anyone watched this movie and do you have any thoughts Forks over Knives?

Bob and I are from corn and cattle country in SW Kansas and this movie as well as reading Eat To Live makes me wonder what in the world are we doing to ourselves.

We enjoyed the movie and I am going to start the process of not cooking my meals based on meat as the main course.

I know of one Vegan out here who has made it work and wonder if there are any other vegetarians or vegans?

We are not ready to jump off the cliff but we are always ready to learn more and find ways to better take care of ourselves.

Our daughter is a vegetarian and her boyfriend is a trained chef. I could happily eat the meals they make for the rest of my life but I'm too lazy to do it. I also love Indian food which is vegetarian oriented (if you ever go on a cruise get the Indian dishes omg they're authentic).
This job doesn't easily lend itself to eating well so I just drink coffee.
I haven't seen the movie and have no political or moral view against eating meat.

Oh and my wife being from Ireland puts her fork upside down when eating vegetables. That always fascinates me.

I've been thinking about dietary issues, too. Have you looked into the primal diet? It's basic thesis is that we're not genetically programmed to ready the way we do, and that our modern, processed foods are making us both fat and sick. Some liken it to the Atkins Diet, but the originators say that that's not true, that plenty of vegetables may be eaten.

As much as I love animals I am still a meat eater and I enjoy a good steak any day of the week.

We are aging like it or not. With a high deductible insurance and wanting to stay healthy it is in our best interest to take care of ourselves. Truck driving is not conducive to a healthy life style and we are looking for ways to change that.

We are able to cook a lot of things in our truck the problem is more of a mind set and that is something I am wanting to work on and wondered if others are on the same path I am on?

My advice would be to try foods from different cultures. Many tend not to be deep fried, and although people think Indian food (as an example) is strictly curried so it must be really spicy and stink.
Find an authentic restaurant and you'll see that's not the case.
One of the great things about the internet is the access to recipes and ideas if you're ready for a change. And you're right it is a lifestyle change and takes a commitment.

Both of us like a wide variety of foods and we like to eat out at different types of restaurants. We both like Indian food, Thai food, Sushi, Italian, Mexican, Japanese, and Korean. The next problem is what I like to cook which is Mexican food and not the healthy stuff either. I agree the internet is awesome and i have been looking up recipes and getting ideas. I am going to start a meal a week based around a vegetable dish and continue on from there.

Have you looked into the primal diet?

I have and found out that it is more or less better for this type of work than a main stream diet or a veggie style diet is.

The key with the Primal or Paleo diet is not about meat or veggies but the purity of the meat and the quality of the veggies with the emphasis on veggies. Fresh trumps all, grain fed meat is discouraged with the grass fed being the preferred type of meat. Meat also include fish by the way. The other half of the veggie thing is the elimination of things we think we can eat without problems - potatoes, beans and things that need to be cook to make it "safe" for us are not in that diet and that actually makes a lot of sense.

Moderation is also key, gorging ourselves, which is a BIG problem here in the US/NA is what is killing us more than the food itself but then drinking chemically laden 'soft' drinks and so on is increasing our risks to every thing too.

Forks over Knives is a good movie but there is one side of a multi-faceted issue and should be a good start to understand some of the issues we face.

When shopping stay out of the isles and do your shopping on the perimeter...canned and perpared packaged foods just aren't good for you...most all veggies can be ate raw and work great to munch on all day long to curb your hunger during the day...Eat any kind if meat you want, just in small portions...use a smaller dinner plate when eating a meal, and don't go back for 2nds...use olive oil when cooking with oil...

Eat often during the day, waiting till you are hungry and eating 3 times a day, we over eat...eat 4-6 times a day and you will eat less..and usually better....

When i was doing the Personal Chef deal day to day for paying clients, ( I am not a ohio licenced dietitian, i did have a nutritionists certificate (not current anymore) and was tested to get it) we never told any client which diet they should be on for either weight loss or simply healthy eating, But when we had a client that wanted to lose weight (and we did market that aspect of the business) when people took the time to research it, and when provides with the right info, most would go with a "Mediterranean type diet"....and smaller portions during the week and then, eat whatever they wanted on weekends when going out or entertaining friends....but still in smaller portions...

Me, I have always ate what i wanted when i wanted it and don't worry about it...at my age, i ain't about to change that now...its all good, and when its not, well thats what I pay life insurance preimums for....:D

I like animals, I like vegetables and I eat both. I believe the key is moderation. Mix it up, animals, vegetables, fruit, grains, sea food etc. You don't need to be a wacko vegan to eat healthy. Like the Chef stated, avoid the canned and packaged foods.

Primal/paleo isn't so much about the quality of the meat, but the avoidance of anything processed. That includes anything processed from grain, like bread, and unfortunately, beer. If it can't be caught (like an animal) or dug up and eaten as in a plant, it's off the paleo list.
