Favorite Meals in the Truck

Since we have so many new members on EO I thought it would be helpful to post some of our favorite meals to cook in the truck. I remember when we first started how I wanted ideas of things I could fix riding down the road. Anyone want to post some easy to fix meal ideas?

Here is one of our favorites: BarBQue Pork in the truck
Place a small pork tenderloin in the crockpot. Add 2 cups water, 1/4 cup vinegar. Cook on low heat for 6 to 8 hours. Take tenderloin out and pull apart with two forks or with your hands. Add your favorite bottled BarBQue sauce. Place in hamburger buns and heat in the microwave until warm. This is very lean (very little fat) and it is wonderful left over. The vinegar tenderizes the meat as it cooks. The BarBQue smell as it cooks is amazing.

For those of you from Texas I know you eat BarBQue Beef. I can't help you there (although I like it). I think you could use beef stew meat but I'm not sure.

Get some of the red sauce from Mark's Feedstore BBQ in Louisville to put on it and you'll throw rocks at anything else from then on.

We started buying the frozen skillet meals. I just put them in a glass dish and microwave. Add some minute rice and it's instant meal.

We have the GT Express cooker and I can put 2 biscuits in each side and they cook in about 6 minutes. I use my express cooker for cooking eggs too. I bought a cheap toaster so we can do egg mcmuffins, or fried egg sandwiches etc.

India? How big is your crock pot?

Green Giant has some great veggie mixes that I really like.
New potatoes with broccoli, carrots and cauliflower with a cheese sauce. Just empty the portion you need on a plate or dish, place a paper towel over them and micro. I also use my George Foreman to grill a hamburger steak and some toast in the toaster. Man I am getting hungry already. Green Giant has
an assortment of these veggie things in the frozen section at all the Wal-Marts. Hope you enjoy.;)

I get a hankerin for Cajun from time to time. I get a box of the Zatarains jambalaya and some kielbasa . Cut the kielbasa up and micro put the rice, kielbasa and water in a casserole dish and micro. Two heaping servings fit for a king.

CHICKEN NACHOS

1 rotisserie chicken
chopped small onion
refried beans
plain nacho chips
shredded cheddar or Mexican blend cheese
salsa/sour cream .. Optional

cut up some chicken, spread refried beans on chips... put on plate...sprinkle onions and cut up chicken on chips and then cheese..... put in micro wave to melt cheese....
top with some salsa, sour cream or some hot peppers or your choice.

I frequently make "HODPODGE" in the crockpot:

1 small chuck steak or roast, cubed
several small potatoes (can use can spuds)
carrots (I usually use a bg of mini carrots)
1 packet onion soup mix
sm can mushrooms (optional)
1 cup water
1 large sliced onion

Layer meat, onions, mushrooms,carrots, then potatoes. Mix soup mix with water then pour on top. Cook in crockpot on high.
Sometimes I'll add a beef bouilian cube or a can of ,mushroom soup. The best part of this recipe is that it's very versatile.
I do most of our cooking in a crockpot. You can make beans & frank, kielbasa & sourkraut, soup, stews, etc.

Pelicn, my crockpot is as old as dirt! It is a Westbend and they don't make it anymore. I don't even know how big it is but it will hold about 5 cups of liquid with the meat.

I can't wait to see Cheri's answer to this recipe post. Come on, Cheri, tell us about your microwave popcorn and ice cream! Additives and preservatives - the two basic food groups. :)

this sounds great.....
i like fresh mushrooms instead of can...... and a problem with to much sodium in stuff.... would do a fresh onion instead of the soup... ha....
i have one of them .. stove thingies.. u put the foil pans in.. it works like a crock pot.... i love it.. easy clean up too.

I do the same thing using a small pork roast. Great and easy way for a wholesome meal. Good stuff.:)

I got lucky and got home before the snow storm. So I am in Ky just got back for Miami. Wish I was still there. Much warmer and no SNOW. Did you get any in Memphis?

We bought a Rocket Grill and a meal we are really stuck on right now is Hillshire Farms Italian Style Smoked sausage, bell peppers and onions. I cut the sausage into about 4" pieces, cut up the onion and bell pepper into long pieces then stick them into the grill for about ten minutes! We either eat this as it comes out of the grill or if driving put this on a hot dog bun.

You can buy the Rocket Grill at Wal-Mart. They cook just like a George Foreman grill but you use a parchment bag to place your food in and drop it down into the grill. The parchment paper collects all the grease then when food is done you throw away the parchment bag and you are done with your cleanup. The grill is also nice as the outside does not get hot to the touch. We love it as you do not have the greasy mess to clean up when you are finished with the grill.

Another good one to use the grill for is hot toasted ham and cheese sandwiches! Very nice and easy to eat while driving. I know you are not supposed to eat and drive but sometimes you gotta do what you gotta do so make it as safe as possible!

I wish I had known that prior to the purchase of the GF. Oh well I will just leave the foreman at home and make a more user friendly purchase with less clean up for the road.

For what that cost you man, I could eat for 2 or 3 days. I am the little cheaper eater. Trust me. I eat nothing outside the truck. I am to cheap. Besides my cooking in most cases is better than my wifes. Shhhhh if she needs to know this I will tell her.

I guess I'm gonna have to come back out there on the road and become a "Highway Gourmet" again!! The "RocketGrill" sounds like a neat little doohickey,too. I was always worried about those drip trays with the GF grill! It was SOOOOO messy to get rid of that stuff! I'm about to start driving a Hino with a Micro/Convection oven. Those are so HANDY,too! Been away from "Little Trucks" for a few years now, and I sure have MISSED them!! All these recipes sound WONDERFUL. I've saved them to my favorites, so I'll try them. Better warm up my "Bilbo Baggins" crockpot!!

Just made chicken salad over the weekend.

3 boneless chicken breasts
a few shakes of salt, pepper, dried onion, sage and a little water in the crock pot.
Mayo, mustard, celery seed, relish.......

FEAST! :D
