Since we have so many new members on EO I thought it would be helpful to post some of our favorite meals to cook in the truck. I remember when we first started how I wanted ideas of things I could fix riding down the road. Anyone want to post some easy to fix meal ideas?
Here is one of our favorites: BarBQue Pork in the truck
Place a small pork tenderloin in the crockpot. Add 2 cups water, 1/4 cup vinegar. Cook on low heat for 6 to 8 hours. Take tenderloin out and pull apart with two forks or with your hands. Add your favorite bottled BarBQue sauce. Place in hamburger buns and heat in the microwave until warm. This is very lean (very little fat) and it is wonderful left over. The vinegar tenderizes the meat as it cooks. The BarBQue smell as it cooks is amazing.
For those of you from Texas I know you eat BarBQue Beef. I can't help you there (although I like it). I think you could use beef stew meat but I'm not sure.
