After many years of OTR in 48, wife and I are beginning new adventures in expediting. We have 2 small Poodles. Are there any restrictions regarding the dogs travel with us into and out of Canada?

Yes, there are some restrictions on bringing pets into Canada.
They must have rabies shots; current and upto date.
You must have papers from a registered vet to prove this.
