Breakfast Pizza -Oh My!!

Linder posted a recipe a while back that was someone else's recipe for Breakfast Pizza. You need to make it at home but then cut it and freeze it to pull out and eat as you ride.

Oh my goodness! This is THE BEST! I followed the recipe but used 4 eggs and 1/2 pound of bacon. I think this would be a wonderful breakfast with the pizza crust and a can of pie filling like cherry or apple pie filling for a change. I'd love to take some on the road next month but I have a feeling it will be gone WAY before then!!

I make a breakfast pizza with sausage gravy for sauce! YUM!!!! Not very healthy, but sure is good. Freezes beautifully as well!

Breakfast Pizza is my favorite and if you do one at home you can freeze individual pcs and heat them up in the micro. I buy a ready cooked large crust from the local store. It is ready browned and no need to cook, but those more ambitious can cook their own. I fry up a pound of bacon and chop it up. I buy four cheese shredded mexican blend but not with the spices. Then I softly very loosely scrambled eggs, about a dozen for a large. I prefer the california onion salt or powder sprinkled in while scrambling the eggs, it gives it a nice flavor....then I layer some shredded cheese on the crust, then spoon the soft eggs over the cheese, then add the bacon, then layer more cheese over the top. Cook about 10 to 15 min in the oven at 350 degrees and voila! A breakfast pizza. I cut it up and pkg one or two to a pk. Freeze what I don't eat and take it along for a quick breakfast heated in the micro....deeeelicious...try it. It sounds complicated but very easy. You can do egg beaters and turkey bacon if you are watching your cholesterol...but use the onion salt or powder to give more flavor. You can also use ham or sausage...The california onion has bits of green onion in it.fyi

India can you re write the recipe on how you made it and we will get it added to our recipes for the book. Sure sounds good we will try when we are at home.

I wonder could you use the pre made crusts and microwave in the truck or do you have to use the stove? What about one of those toaster ovens? Will not work in the cookbook if it cannot be made in the truck in some fashion.

Linder, I can't figure out a way to make this in the truck. You'd have to make it at home to bake it then cut it in pieces to reheat in the truck. I bought cherry & peach pie filling today to try with the crust. Here is the way I made it using the basic recipe you posted:

I'm not seeing any reason it can't be made in the truck: ready made pizza crusts come in small sizes (personal), bacon and eggs can be cooked in the microwave, then layered on the crust with cheese, and finished in the microwave, on maybe 70% power, to melt the cheese evenly. I'll try it, and let you all know how it comes out.

Cheri let us know how it works just being made in the truck. We are lacking on breakfast items!

Has anyone done any fun Christmas or New Years items in the truck that we can add to the book?

That Cheri has some really good ideas, don'tcha think? I'm impressed!

Okay if that works in the truck then the pie filling will work also in the truck on those personal pizza crusts. So far I haven't been able to find the already cooked crust. I'm sure I have seen them somewhere but I can not find them in local stores. Just think how yummy a pizza crust with cherry pie filling will be for breakfast, warmed in the microwave!

Now I have to go see whether I inadvertently posted the same comment in a different thread, cause I thought I' already put it here, and it wasn't....:eek: (Maybe I stuck it in somewhere that it might seem to belong, anyway, lol):D

Wouldn't a toaster oven work? They are small. You might have to store it in the side box. I think it would be very useful on the truck. I use one at home a lot.

Sorry, Linder, but I'm not doing Christmas foods in the truck - I'm borrowing my sister's real kitchen, as I always do when I'm home for a few days. I'm going to make Kolaches (an Eastern European pastry, with fruit or nut or cream cheese filling, crust of cream cheese & flour, sprinkled with sifted powdered sugar - yummy! NOT hot dogs in pastry, as I've seen them billed elsewhere.) Also eminently freezeable - if there are any left, which never happens, lol.)
They're easy to make - I just need to find the recipe, as I think the cookbook is in storage.... Will post it when I find it, though, in case anyone else would like to make them - but they DO need an oven.

Agreed, it's a very useful item, and the next one I'd get, if I can reorganize all the stuff I already have to make room for it! I brown things in the rice cooker (thanks to India), and I can bake meatloaf in the 'Burton Stove' (thanks to Susie), so I haven't needed a toaster oven yet - but it's on my list.
I know others already have one, but I just find ways to work around it, so far.

Kolaches

1 cup butter, softened
6 oz cream cheese, softened
2 & 1/2 cups all purpose flour
"Solo" canned filling (fruit, almond, poppyseed, etc)
Powdered sugar

Cream butter & cheese together, beat till fluffy. Add flour, mix well. Roll dough into a square, about 1/4 inch thick. Cut into squares, approx 1 & 1/2 inch on each side. Place 1 tablespoon filling in center of each square, then cross 2 corners into center, overlapping slightly. Place on greased cookie sheet, bake at 375 for 15 min, or until lightly browned. Let cool, the sprinkle with powdered sugar (a sifter works best.)
For cream cheese filling, cream the cheese with powdered sugar to taste & add a few drops vanilla or almond flavoring.

Most recipes use a yeast based dough, but this one's quicker & easier, and very good.:)
