Golf: in order to even know which questions to ask when interviewing a carrier, one needs more knowledge and experience than the OP apparently has. That's not a slam - we all started out not knowing anything until we learned it.
For Newbies and wannabes, the first stop should always be the FAQ, because it has most of the answers they need to get started.
