As a restaurant manager, and then a district manager, this very issue was one of my training specialties. I know the deal, the lingo, the way it works and it supposed to work, and the fact that they are supposed to know this stuff cold, so they can't snow me on any of it. When I see someone not even using gloves properly, I know what else is going on behind that door, and I call them on it.[/QUOTE]
Turtle: I agree with you 1000%. My first career was 25 yrs in Food Service Mgmt, about half of that as a DM. I too, repeatedly find myself in the same position of teaching, coaching and correcting. Last week the facility I stopped at was so bad, I searched the Web for the local Health Department and shared with then a list of six concerns observed prior to walking out hungry. I would not eat there. To stay on top of things, I still maintain my Serve Safe Certification. Glad to hear others out there do the same thing and don't turn a "blind eye" to bad situations that could endanger themselves and the public in general.
